• 2 tablespoons oil

• 1 kg pork belly — cubed

• 8 cloves minced garlic

• 1 red onion, chopped

• ½ cup soy sauce

• ½ cup vinegar

• 4 cups of water

• Pepper

• 5 tablespoons brown sugar

• Bay leaves

• Black beans

Procedure

1. In a pot, start heating oil in a large pot over medium heat and start putting the pork belly until it gets slightly browned. Let the fat tenderize and set the pork aside. Leave only a little amount of oil rendered and serve aside the excess.

2. As soon as you remove the pork, saute the garlic and put it back after the garlic gets fragrant. Continue stirring while you add the rest of the ingredients.

3. Cover the pot and let it simmer for at least an hour. When the pork is tender, remove the cover and continue to simmer until liquid thickens.

4. Serve!
