The 2020 Holy Week is just about done and the year is just getting more exciting. The number of new COVID-19 cases are starting to show signs of slowing down, and this unique Lent community quarantine will soon let up, hopefully. If you’re thinking about what to prepare on this special Easter Sunday at home, here are some easy recipes you could do with what you have in the pantry.

Creamy Pork Chops

What you need:

  • Pork Chops, preferably boneless
  • Salt and pepper
  • Olive oil
  • Baby Bella mushrooms, sliced
  • Garlic, minced
  • Heavy cream
  • Parmesan cheese, grated
  • Dried oregano
  • Crushed red pepper flakes
  • Baby spinach

Directions:

1. Season pork chops with salt and pepper on both sides. On a skillet goes some oil, heat it before you put in the pork chop. Cook it all the way through and set it aside to keep it warm afterward.

2. In the same skillet goes mushrooms and cook for around 5 minutes until soft. Add in garlic and cook it until fragrant.

3. Time to add heavy cream, Parmesan, oregano, and red pepper flakes. Taste and adjust with salt and pepper. Bring the heat to a simmer until the sauce thickens. Then, add spinach and continue cooking for around 2 minutes until the spinach wilts.

4. Put the pork chops into the sauce and continue cooking until the chops are warmed again.

Nothing like a hearty meal brought to you by the fresh local produce of Davao. You can also create variations of this recipe and experiment on ingredients you want to have on your sauce. If, for example, you’re not a fan of spinach, you can replace it with lettuce or reserve the greens for another dish. Perhaps a salad that features the best of Davao Fresh Vegetables? If you’re looking for a source of fresh leafy vegetables and other produce, better visit the Malagos Homegrown Produce and add your needs to your cart.

As you cook your meals on Easter Sunday, remember to think of the positive things. It’s easy to feel like everything’s gone awry, but a meal full of richness and made with love and care creates delightful moments. You just went through the year’s most prayerful week. Let us maintain this attitude of gratitude and prayer throughout this crisis.
